Parsnips with Ginger and Basil
2 lbs. parsnips peeled and chopped like carrots
1 tbsp grated fresh ginger
1 tbsp. chopped Vidalia onion
1 tbsp. fresh chopped basil
1 piece of cooked and crumbled bacon
3 cups olive oil
¼ cup dry white wine
1 roasted red pepper
chopped parsley
Sauté in olive oil the ginger, onions and parsnips for 10 minutes; add white wine, and bacon and simmer gently for 5 minutes or until wine cooks down by half; toss in basil, bacon and parsley, and salt to taste. Toss to fully coat and serve with thinly sliced roasted red pepper on top for a festive presentation.
Sweet Potato Soufflé
Not a soufflé at all, but it sounds so nice, n’est pas? (Don’t tell Martha)
4 sweet potatoes
1 white potato
2 tbsp. butter
2 tbsp. sour cream
2 tbsp. sweet chile sauce
salt and pepper to taste
Peel all potatoes; cut into smaller pieces. Place into large pot of boiling water and cook for 25 minutes or until soft. Drain and place into mixing bowl. Add butter, sour cream and sweet chile sauce, and mash with electric mixer. When fully mashed and mixed, add salt and pepper to taste. Serve.
